Vegan Mushroom Walnut ‘Meat’

Today I wanted to share this amazing Vegan Mushroom Walnut Meat recipe – because it’s super delicious, gluten-free, plant-based and so easy with just a few ingredients! Yum!!

Vegan Mushroom Walnut ‘Meat’

Ingrediens:

1/2 cup sun-dried tomatoes (drained well)
1 cup walnuts
1 cup chopped mushrooms (I used 1 pint)
1 teaspoon ground cumin
1/2 – 1 small clove of garlic, peeled and minced
1/4 teaspoon cayenne pepper
endive to serve
green onion, chopped to serve

Directions:

Simply pulse all the ingredients in a food processor until a fine texture forms. Do not over mix or it will become more like pate (which will also be amazing ~ so decide what you want first ;))

Scoop into endive leaves and top with chopped chives.

This is now my new favourite recipe! I devoured this!! It’s SO good! And so super simple ~ just my kind of recipe.

    Do you cook mushrooms first or heat in any way?
