Delicious healthy hors d’oeuvres : Cucumber Roll with creamy avocado

I love fresh delicious little party plates! These Cucumber Rolls are perfectly crunchy and smooth with a great fresh taste of the cucumber and creamy avocado spread. This is one delicious crowd pleaser – for people who are a little health conscious, people who have allergies (this is very allergen friendly) and for those that will eat just about anything ~ a little something good-for-you will do you good! ;)

Let’s get to work :

Did I say these are very very easy to make? And it just takes 10 minutes and no cooking or much prep work required? Yes. Yes. Easy impressive-looking party food is awesome!

CUCUMBER ROLLS HORS D’OEUVRES
WITH CREAMY AVOCADO SPREAD

Ingredients :

1 large organic English cucumber (or 2)

3 ripe avocados

1/4 cup capers

1/2 teaspoon pink Himalayan salt or sea salt

freshly cracked black pepper

2 tablespoons of freshly squeezed lemon juice

1/4 cup fresh parsley, chopped fine + more for plating

1/8 cup fresh dill, chopped fine

Directions :

It’s a good idea to grab more cucumbers than you need for this recipe as some pieces could break and you only use the middle part not the thin sides that will be cut. You don’t want to run out. Wash and dry the cucumbers. Use a mandolin to cut thin slices all the way through. Keep slicing the sides until you reach the full centre. Be careful that they don’t break. (the thin pieces could be saved for a salad or eaten up or composted).

In a bowl, mush all the avocado meat and add in all the other ingredients and mix.

Lay out each cucumber slice and layer a coat of the avocado spread all the way across. Start to roll on one side until you reach the end. Be sure to have some avocado spread at the end (without any capers) to act like glue to seal them up at the end.

Dress up with extra parsley and capers and serve!

(In the heat of the summer, be sure that the avocado doesn’t tolerate the heat well, so be mindful of that and serve these as appetizers so they’re eaten up quick or keep them in the fridge until serving time.)

 

I hope you enjoy these! I don’t often find healthy appetizers and hors d’oeuvres at parties – and wish I did! Party food can be delicious and healthy and meet mostly all the restrictions that people with allergies could have. So it’s a win win all around! ;)

    Genius! Clean eating at its best. These remind me of the tortilla roll-ups my mom used to make with cream cheese…this is a much healthier version!

    I read on Pinterest that putting onion in with avo is the best way to stop it browning so I’m going to add that to your lovely recipe and see what happens.

    While the ingredients tasted nice, this was a visual disaster and I could not use them for a party I was attending. Despite towel drying the slices of cucumber, everything still became a mushy mess, wouldn’t hold up, and looked like a wreck. Off to figure out another plan for the party in 3 hrs.

      Thanks for trying out this recipe although I am sorry that it didn’t work out.
      It could be the result of the ripeness of the cucumbers, they could have been too fresh and a little bit on the crispy side to break too much for you. OR the slices could have been too thick. I have a mandolin that gives me super thin pieces and it works great all the time.

      I do hope you’ll give them a try again soon, maybe with less pressure this time ;)

      I just want to mention… not too ‘warm weather’ as the avocado might turn brown quite quick in the heat and go rancid quick.

    Love these ! I’ve made cucumber rolls a few times before (my favorite filling being avocado, carrots, tofu, red peppers, garlic and ginger) but these look delicious adn I love all things avocado : )

    This cuke-avo roll looks like a fast and easy dish to make – and the capers will add a nice tang. In terms of the comment healthy above I thought this was an interesting site that lets you analyze recipes. http://caloriecount.about.com/cc/recipe_analysis.php I tried one recipe and it seemed to make sense.

      Hi,
      Perhaps a few chopped olives? or chopped sundried tomatoes? garlic in oil? red peppers? It could be fun changing up that ingredient ~ let me know what you try and how it works out for you ;)
      Just keep the pieces really small so they roll up well. enjoy!

    I did this for a simple, yet impressive, part of a romantic dinner for a couples’ retreat in the Hills. I used an all natural avocado salsa item found at Costco. Even the men enjoyed how they looked. It was fun to have everyone think it was so much work. ;)

    Well, I made these the other night, but had to use toothpicks to keep them from falling over after filling! How do you get them to stand straight up on your serving dish?

      Hi Leslie,
      So happy you gave this a try… not so happy these didn’t hold up for you.
      Two things come to mind – 1 is the thickness – the thinner the slices are the better they roll up. It depends on the mandolin too, not all of them have the same thickness.
      2. The ripeness of the cucumbers. Some varieties or very fresh cucumbers are very crispy and could break more or be stiffer/ stubborn to roll up.
      Keep these things in my next time you try them and I hope it will go better for you. ;)

    I take care of 5 toddlers in addition to two teenage boys everyday, so no time to make these gorgeous roll ups, but do you think it might work as a deconstructed roll? Maybe cubes of cucumber and avocado, or pureed avocado…?
