To continue our ‘making things’ week… I wanted to show you what we’re ‘making’ in our kitchen!

We have a blast making some fun animal shapes out of pancakes. Once you’ve got a batter ready to go, it’s really simple to create a shape you want. Here are some that we’ve done lately ;)

pancake-animal-breakfastpancake-animal-breakfast3pancake-animal owl-breakfast 2These make breakfast eating so much fun for kids (we don’t do this all the time) but when we’re in the mood and have some fruit we can shape on hand ;) we go for some PANCAKE ART in the kitchen!

Here is my great recipe for Buckwheat Gluten-Free Vegan Pancakes

Ingredients: 1cup rice flour, 1 cup buckwheat flour, 1/2 cup tapioca flour, 1 tsp sea salt, 2 tsp baking powder, 1 tsp baking soda, 2 tsp xanthan gum, 2 1/2 cup soy milk or almond milk, 1/4 cup vegetable oil, (you could add 2 tbsp of molasses and 2 tbsp of sugar)

Directions: Mix it up, let it sit for a few minutes, mix again and drizzle onto a hot pan sprayed with cooking oil ;)
