As the summer rolls in…. and summer hats, skirts, tank tops and flip flops get pulled out of the closet…. so do the rice paper discs from my kitchen cabinet! We’ve been enjoying the heat lately…. so unusual for May but oh-so-good to have right now, finally! And when the heat does come in… you’ll bet I’m not going near that stove! That’s when I’m most thankful for lovely rice discs ~ so easy and quick to make healthy spring rolls, customizable to everyone’s liking ~ and in the end it’s just fabulous to bite into. (oh and no hovering over a stovetop for this one!)
Our Rice Paper Spring Rolls get filled with kale, carrots, organic tofu, cucumber, avocado, mung-bean noodles, some with sauteed vegetables to mix up the variety ~ and accompanied by a Creamy Tamarind Dipping Sauce! All together this makes one amazing lunch! Glad you could join ;) Even my daughter loves them!!! Who says kids don’t like raw veggies??? ;)
This is a really easy fun lunch to make ~ even when the company is already over and you could serve up a Do-It-Yourself station (you know I love those ;). There’s always instructions on how to prepare your rice paper on the package, but to put it simply, they just need to be dipped in hot water on a plate for a few minutes, dabbed off a bit, spread out with favourite filling and wrapped up! Here’s a how we made our :
RICE PAPER ROLLS
{naturally gluten-free, vegan}
- rice paper discs
- organic tofu; sliced thinly into long strips
- organic kale; use whole leaves
- veggies of choice;
carrots, cucumber sliced into thin strips - avocado; sliced or made into a spread
- bean sprouts (would have been great but we didn’t have any)
- vegan mayo (we use Veggenaise)
While assembling your rolls, you can spread some of the ‘dipping sauce’ inside as well for extra flavour. Otherwise, the rolls themselves are packed with natural veggie-and tofu flavour ;)
CREAMY TAMARIND DIPPING SAUCE
{gluten-free, vegan; dairy and egg free}
- 4 spoonfuls vegan mayo; Veggenaise
- 1 tbsp tamarind paste
- 1 tsp gluten-free soy sauce
- cracked black pepper
- cayenne pepper to taste (optional)
Mix all the ingredients in a small bowl. My suggestion is to add the tamarind in slowly to check how much flavour you want in your dip. I omitted adding salt as there’s usually enough salt int he tamarind and soy sauce.
So it feel like summertime is here ~ summer cooking (or summer non-cooking) has began. I’m definitely craving more fresh veggies and meals that are quick to make: the type that just get thrown in and are served up fresh and crispy. We’re loving these rice paper rolls/ wraps a lot lately and I’m kinda excited I got my sister hooked on raw kale!

These sound delicious! Just made rice paper rolls myself the other day with a peanut dipping sauce. Never would have thought to mix mayo with tamarind — sounds brilliant!
