Happy Valentine’s Day my sweet friends! I have something very sweet for you today ~ it’s our Marshmallow Pops that are super fun to make and even more fun to eat.
So if you’re looking for something fun to do today with the kiddos I do recommend these babies as they’re easy for little fingers to make, and just super cute and delicious as the marshmallows are dipped in chocolate and then sprinkled with sprinkles. Yes, this is sugar overload. Please note that this is not my style of a healthy recipe ~ but it is Valentine’s Day ~ we break the rules on very sweet special occasions.
(as a sidenote, on my diet I do not eat these – but it’s enough fun for me to just help make them and take photos of them ;)
Marshmallow Pops : Ingredients
marshmallows (look for vegan and gluten free such as Dandies)
wooden skewers or chopsticks ~ we used chopsticks that we had around, free from our last sushi take out
dark chocolate (milk chocolate would be too sweet)
sprinkles and decorating sugar
We served ours with warm unsweetened almond milk for dipping.
A few other topping suggestions: ground almonds, pistachios, coconut flakes, or sprinkled with cinnamon or anything else that you have around that you like.
They will keep well for 1-2 weeks covered.
Melt the chocolate on a double boiler. I use a bowl over a pot with boiling water.
Set up all the goodies on a table so it’s convenient for the little ones ~ and call out for some little children, or even grownups with a sweet tooth. Better yet, throw a party! These would be so fun for a little gathering with friends ;)
Fun is guaranteed with these cuties ~ with both these girls and the marshmallow pops. The only chaperoning I had to do was to control the amount they eat. We stopped at one that day and we had another dessert party the next day… Who could stop at having these babies only one day ;)
I wrapped the bottom of a jar with a red ribbon and a lace ribbon layered on top. I glued a little red heart from crafting felt for a little touch of loveliness ;)
Another sweet idea would be to wrap these in clear cellophane or parchment paper and deliver to your special Valentine. We will do that later today and present them to a few of Gabi’s friends in the neighbourhood.
ps. this is not a treat I would eat myself even with the tweaking of some of the ingredients to vegan and gluten free. I’m on a low sugar diet. It’s an exception for me to have this on my blog as it is Valentine’s Day, I think it’s ok to have a little treat once a while ;) And what better day than today? ;D

I made these with my girls for Christmas – but we used white chocolate and called them “snow pops” :) Happy Valentine’s day!

Just a note though, that the recipe is intended to be vegan so no dairy which is used in white chocolate. But I love the ‘snow’ idea ;)
