Coconut Lemon Balls

Coconut-Lemon-Balls

I have a delicious and easy dessert for you today ~ Coconut Lemon Balls!

These are scrumptious and amazing and they are also super quick and easy to make. These coconut lemon balls are no-bake, gluten-free, dairy-free, vegan, paleo and refined sugar-free.

Coconut Lemon Balls

gluten-free, grani-free, egg-free, dairy-free, vegan, paleo

Makes 10-12 balls

Ingredients:

1/2 cup almonds

1/2 cup pecans

1/2 cup walnuts

1/2 cup pitted Medjool dates

2 tablespoons coconut flakes + extra

2 tablespoon lemon juice

1/4 teaspoon lemon zest

1 tablespoon warm water if needed

Directions:

In a food processor, process the nuts until fine crumbs form. Add in the dates and mix to combine well. Add in coconut flakes and lemon juice and zest and mix again to incorporate.

Turn off the food processor, and mix the dough with a spoon and scrape down the sedes it’s incorporated well. Turn the processor on again for a few seconds. Turn it off again and check if the mixture sticks between your fingers. If it’s too crumbly, then add 1 tablespoon of warm water and mix again. Test out the texture by scooping one tablespoon of the mixture onto your hands and forming a ball by rolling the mixture between the palms of your hands. Once the mixture is ready, proceed to make all the balls.

Spread out about three tablespoons of the coconut flakes onto a plate and roll the balls in it to cover slightly.
Serve immediately. Makes 10-12 balls.

I hope you enjoy these soon! They are my quickest go-to dessert and snack. They are not too sweet and have tons of protein to keep you satisfied.

These are also great for hiking and picnics as there is no ingredients that melt. And the extra coconut flakes don’t make them sticky to grab. Key in making a great little snack :)
