Beating the heat is hard especially on some days when turning on the oven is just not an option! We enjoy making some light meals that are simple to make and cool off the body.
These are so simple and yet so delicious. Fresh veggies and little add-ons like egg, tofu, ham and cheese make them so yummy. These can be messy to eat for little hands. Here is a toddler version:
The possibilities are endless but here are our current favourites:
Vegetarian: (+ anti candida) Avocado (spread on a yeast-free multigrain bread) with a slice of tofu and toppings: spinach, tomato, egg, with shredded radicchio on top
Meat: Multigrain bread with yeast, with spinach, ham, egg, shredded cheese and radicchio
This is a great salad that has lots of fresh greens, egg for protein and sprouts.
Ingredients: mix of romaine and spinach leaves, cucumber, avocado, broccoli tips, red onion, tomato (diced into small chunks), half a hard boiled egg, topped with fenugreek sprouts (see how I make them)
Dressing: olive oil, balsamic vinigrette, squeeze of lemon, sea salt, pepper, fresh herbs like basil, chives or oregano if you have some otherwise use them dried.
Toss and eat up and cool off! (my apologies: you need to turn on the stove to cook the egg ;D)
Vitamins in veggies are so energising you won’t need a coffee.

I do light dinners or stir fry’s – they’re quick to do.
