It’s time for dessert! And lately I’m all about these amazing Peanut Butter VEGAN BROWNIES!
These brownies aren’t your grandma’s recipe – these are kicked up a notch with nutrition-boosting goodness! There’s Omega 3s, protein, antioxidants! Best of all this is a naturally gluten-free and vegan brownies recipe. And they taste amazing… so rich and decadent! Who’s excited?
Peanut Butter Vegan Brownies
(gluten-free, dairy-free, egg-free, can be nut-free if omitting the peanuts and subbing sunflower butter for the peanut butter)
Ingredients :
- 3 tbsp flaxmeal (mixed with 6 tablespoons hot water)
- 1 cup gluten-free flour mix or spelt flour
- 1/4 cup cacao powder
- 1/2 cup coconut palm sugar or date sugar
- 1/4 teaspoon salt
- 1/2 tsp baking soda
- 1/2 cup almond meal
- 1/2 cup coconut oil, melted
- 2/3 cup almond or soy milk
- 2 teaspoons pure vanilla extract
- 2 tablespoons natural peanut butter (unsweetened)
- 1/4 cup chopped peanuts
Directions :
- Preheat oven to 350 F and grease an 8 x 8″ baking pan.
- In a medium bowl, whisk the flaxmeal with hot water and set aside.
- In another bowl, combine all the dry ingredients: flour, cocoa powder, sugar, salt baking soda and almond meal.
- Add all the liquid ingredients into the flaxmeal mixture: oil, milk, vanilla extract, peanut butter and mix to combine well.
- Pour the wet ingredients into the dry and mix to combine well.
- Stir in 1/2 the chopped peanuts. (Reserving the rest for topping.)
- Pour into the prepared baking pan and bake for 25-35 minutes making sure the top looks dry.
- Remove from the oven and allow to cool completely before serving. (This is very important as these are very crumbly when still hot/ warm. In fact, I found them the best the next day after they were covered and stored in the refrigerator overnight.)

- These brownies are a great dessert that’s low in sugar (only 1/2 cup of sugar in the whole piece).
- I used coconut palm sugar which is a low glycemic sweetener and does not spike blood sugar as high as refined sugar.
- I included protein which is so great to do in desserts, the protein is found in the peanut butter, peanuts and almond flour.
- I included a healthy fat such as coconut oil which is great to do with desserts as it also makes you feel fuller so you’re satisfied with less.

I have all of the ingredients except almond flour. Will they turn out ok if I don’t include it?

Yes, I think that’s completely fine :)
I only included it to increase the protein and it really doesn’t *need* to be in the recipe ;)
That said, I haven’t tried it without, so I’m not sure of the results.
