our weekend : thanksgiving

We are very very lucky that our Thanksgiving weekend falls early in October – always a beautiful time of the year to have a nice family dinner, share stories and cook up a nice meal. But this year especially, the weather was just incredibly perfect – summery with a hint of a refreshing breeze. Wow, incredibly rare and incredibly well timed for a beautiful holiday wrapped around the idea of giving Thanks. Because, one of the great things we were all thankful for was this beautiful day that we were able to enjoy together with family. Thank you Mother Nature for being so good to us – now you can bring on the real fall! ;) And thanks to my father-in-law for hosting it this year. Doesn’t he have a beautiful yard? I’m in love with that big old plum tree decorated with love with hanging lanterns – it was the perfect spot to set up our desserts after dinner.

I made a scrumptious Pumpkin Pie that I had to seriously convince it really was vegan and gluten-free! I also made a new version of my lentil casserole ~ this time with sweet potatoes and with a European flavour. And my husband made his very famous soup that everyone always raves about –  a Butternut Squash Puree. And rave they did ;)  I loved this stress-free celebrating for a change ;) Not having a working kitchen easily crossed us off the host list. (all recipes coming soon!)

      two days later and it’s already very cold – very normal for this time of the year ;)

    Hi Ella, it’s always nice to hear from you! Looks like you had a great Thanksgiving! I spent mine at home, thankful for my children’s company, thankful that my family is still a family after these crazy past months. Life is good again. I shared a recipe (vegan and gf) you might enjoy ;)
