This week was busy busy busy but we managed to squeeze in some baking time with my two nieces (ages 16 and 18). Gosh I felt like I was their age just a second ago…. ;)
I think they like going to their cool aunt’s house – they are never bored here and it’s not chores I have for them. It’s either crafting, making jewellery or this time it happened to be baking (which could be a chore – but not here!) Apparently this gluten-free baking is catching on quick and they wanted to learn how to do this great dessert (and we added toasted walnuts). So we ended up making two batches of batter, one for the bundt cake and the other for the muffins. They took the bundt cake home for their mom at the end – I think she liked that ;) I hope we’ll be doing a lot more of that – I have to add that they’re both amazing babysitters too ;)

-if you can eat eggs you can add 2 but try the gluten free flours – they are great and so much better for you ;)
To easily reduce gluten in your meals – substitute regular pasta/ macaroni to brown rice pasta or rice noodles – tastes about the same as wheat and sooo much better for your whole family.

We don’t visit the library as often as I wish we would, but this week we made trip; bringing home close to twenty children’s books and sitting on the couch, reading and looking at the pictures for long periods of time throughout the day, that is my best highlight this week:)

Lovely time you all had! What a cute family! We haven’t had our highlight yet. I think it will be the pinewood box derby tonight followed by our family movie.
I can’t believe that tsunami and those poor people. I didn’t even hear about it until a couple of hours ago.

Sounds like fun! Things have been nothing but crazy here this year. But my daughter rearranged her schoolwork and we took this past Friday off. Brunch, thrift stores & lots of time together; we had a wonderful time!

Hmmmmmm… This week’s highlight has been planting seeds on my kitchen table, trying to pry my pre-teen daughter away from her phone or ipod to help me plant. I love gardening and I’m HOPING to instill the same love in her as well. There is nothing like watching something grow from a seed to a seedling and then transplanting it into your garden to grow. Never gets old!

Big highlight from this weekend was actually getting way ahead in our packing. I feel ahead of the game right now (although that could change by the end of the week), yay!!
