chickpea burgers

Want to cook or grill a great vegetarian/vegan burger? I did these babies last weekend and everyone really LOVED them. It’s a simple recipe with a FRESH, SUMMERY flavour. You gotta try this!

Chickpea Burgers

1 can of chickpeas, rinsed and drained well
1 red pepper
bunch of fresh cilantro (use how much or how little you like)
1 small onion
1 clove of garlic, minced
1/2 cup croutons or  bread crumbs (can be gluten-free)
1/3 cup chickpea flour or coarse cornmeal for coating
salt & pepper to taste
1/2 teaspoon of cayenne pepper (optional)

non-vegan option / if you eat eggs – you can add 1 egg into the whole mix, and skip the chickpea flour coating.

Directions: In a medium skillet, saute the onion, garlic and red pepper until soft but not necessarily fully cooked. Set aside and let cool. In a small mixer or food processor, blend the chickpeas until almost smooth, some texture is good.  In a bowl place the mushed chickpeas, veggies along with all the other ingredients and mix either by hand or a wooden spoon. Shape into balls and press to make burgers. Spread out the chickpea flour or cornmeal on a large plate, and dip your ‘cakes’ into the flour so they’re covered all around.   Cook them on a frying pan with olive oil. 5-6 minutes on each side.

You can also grill them! But use a grilling dish as they can be a little delicate to move around.

You can serve them with some rice and salad or add into a burger bun – both are SUPPER YUMMY options. Enjoy. Let me know if you tried these this weekend and how you like them.

    Paola, you’re totally right. I forgot to mention a vegan alternative.
    Grounded flax seeds…??? I will have to try then like that. My suggestion would be to add a few spoons of soy or rice milk as well – That should moisten them and help to hold them together. I will experiment with this and leave an update. Thanks for visiting.

    these look amazing! i am going to try these for sure. thank you for sharing them with me!! i also have another burger recipe i’d like to try using black beans, rice and beets. but we eat chickpeas all the time…in fact…i’ll be posting my hummus recipe this week. and i’m going to try making falafels for the first time. yum yum yum!

    Which country do you come from? It’s the first time I’ve ever come across the term ‘cilantro’. Your recipe was written in English and yet I had to take the time to google cilantro only to find that it’s coriander! Why did you not just say coriander? Thanks for wasting my time. Blimey.

      Blimey, coriander and cilantro indeed are/come from the same plant, but the difference lies in which part of the plant is being used. It is cilantro when using the leaves, and coriander when using the seeds.
