This time it’s with RASPBERRIES – of course – you knew it was coming. Our daughter loves making and eating muffins, they just make a great snack that you can fill up on. I love to control the amount of sugar, fats and what grains to use. The ingredient combinations are probably endless – but for these we kept to a simple recipe.
RASPBERRY LEMON MUFFINS
The inspiration came from Sgt and Mrs Hubs with a few adjustments:
Mix together:
2 cups of flour (I used 1 1/2 cup spelt flour, 1/2 cup all purpose flour)
1 Tablespoon baking powder ( I used a teaspoon – not enough)
1/4 teaspoon salt
Mix separately:
1 egg
1/4 cup sugar
2 teaspoons lemon extract or the juice of 2 medium or 1 large lemon
zest from a 1 lemon
1/4 cup vegetable oil
1 cup plain unsweetened soy or rice milk (I used rice)
For the topping:
1/4 cup butter
4 spoons of all purpose flour
2 spoons of sugar
After mixing the wet and dry ingredients together, let the batter sit for 10 minutes. Add in: 1 cup fresh raspberries. Fill the muffin cup with batter. (mine didn’t go all the way to the top – I ran out of baking powder and only had 1 teaspoon.) Bake at 425 degees for 14-18 minutes. When the muffins are finished baking let them rest in the muffins pans, on a cooling rack, for 10 minutes. Remove from the pan and cool completely.
I realize it’s summer time and for some turning on the oven is CRAZY – but little muffins only take about 15 minutes people – the oven will be off and you’ll be munching down on a nice muffin before you know it. I wouldn’t go crazy baking something for over an hour – but with little treats like this – why not?
When I took them out of the oven to cool – it was a nice late afternoon with the heat wearing down – I still had the tray in my hands when I looked outside the window to find my man with our little girl playing ball. I love to watch them play – it always brings a smile to my face. By the time they came back inside, the muffins were nice and cool and ready for an evening treat.
