Sometimes all you really really want is a cookie! Am I right?
But buying a bag is dangerous. Cravings hit and before you know it, you’re scraping the bottom of the bag for more. And they can be garbage in every sense : artificial ingredients and colours added, preservatives and even GMO’s! Then there are the gourmet kind – pure decadence with organic ingredients, guilt-free – the kind I do like to splurge on once in a while… but they come with a price tag and sometimes I just don’t want to eat up six bucks in 30 seconds.
Then there are days when you really just want to bake some cookies! I have these days all the time – but sometimes I don’t have the energy or time or the ingredients to get fancy with cookies!
But it’s not just me who calls the shots! I have a little cookie-monster who goes around with those cute puppy eyes waiting for a yummy home-baked treat that mommy will soon give ;) And that is probably the biggest reason I want to bake! Although sometimes, the best part is to just know a few tricks to get a cookie on the table but not pour any sweat doing so ;) And that is my friends…. why these simple natural Two-Ingredient Cookies were created – – the inspiration was pure love! Simplicity at it’s best! Plus memories of my mom frying up smashed rolled oats and bananas as ‘pancakes’ :)
And yes, these cookies are naturally gluten free, vegan and organic with no sugar added… Enjoy!
Two Ingredient Cookies (gluten free, vegan and sugar free cookies)
Ingredients :
2 very ripe organic medium bananas
1 cup gluten-free certified* rolled oats**
add ins : 1/4 cup dark chocolate chips or dried fruit or nuts, hemp or sunflower seeds or even spices like a teaspoon of ground cinnamon. Have fun!
Directions :
Preheat oven to 350 F. and prep a baking sheet with parchment paper (not wax paper).
In a bowl, squish the bananas with a fork, add in the oats and continue mixing until both ingredients are fully incorporated.
Scoop about a tablespoon of batter per cookie. Bake for about 13-15 minutes until a golden colour appears.
Remove from oven and allow to fully cool before serving (about 30 minutes). (ps. that really is the hardest part *))
* Did you know that Oats are naturally gluten free? However the ones you buy without any claim to be Certified Gluten-free usually will contain gluten! That’s because during the processing of the oats there can be contamination of wheat or other glutenous grains which would add wheat to your oats. That’s why if it’s important to you to avoid wheat and/or gluten from your diet, you have to get Certified Gluten-Free oats, and organic all-natural too.
** Rolled Oats are best for this recipe as they will add a nice texture and chewiness to your cookie. If you have Quick Oats, those would work also as those are just pressed thinner but not processed. However do stay away from Instant Oats as those are the most processed, pre-cooked and then dehydrated and sometimes with added preservatives, salt or sugar. Yuck! Please never buy Instant Oats like the Quaker brand ever! Oats are so nutritious but once they remove all the good stuff then it’s no longer a super-food. Steel Cut Oats are fabulous in a nutritious sense but will be too tough for these cookies. Keep those for your hot morning oatmeal instead.
NOTES : If you’d like to kick it up a notch and add more ingredients – I adapted this Two-Ingredient Cookies recipe to make Superfood Breakfast Cookies – the base is still oats and bananas but they have a bigger yum factor and health boost with superfoods – a must try! :)
So sorry to have messed up your New Year’s Resolutions my friends – but really, how can you go wrong with a banana and oats!
Go ahead… indulge away! Because essentially it isn’t about depriving yourself – it’s about finding out the good and living it up!!! And if in the process you make a little 6 year old smile and enjoy her reaching for ‘just one more’ cookie ;) And it’s ok if you loose count and not care how many she really eats… because how can you go wrong with beautiful natural ingredients with natural sugar and even protein. I think I’ll go back for one more… or two! (ok, three ;))

This was my daughter’s reaction on the first bite – – rolling eyes, mouth full (too full to say a word) and an immediate thumbs up and big nod with her head ;) When she freed the other hand to get the rest of the cookie in, she jointed the other thumb in two thumbs up!! and more nodding… eventually she did speak but not for long as she attacked the plate for more ;)
How can you say No to a banana and oatmeal right? ;) She’s six and a very happy taste tester ;)

Yes they are quite wonderful, chewy with a bit of texture – yum!… we never knew how they are the next day… but I think they’ll get more moist after a bit.

Hi Sara, Great question and I’ll be sure to add that to the recipe as a sidenote…
I used Rolled Oats (certified gluten-free) – I find the rolled oats have a great texture and maintain a lot of the nutrition.
Quick Cooking Oats are good to use also, although the texture may not be as present in them – if you have those on hand try them and see how you like them, you could also mix in different types for next time and find the best preference.
There’s only one Oat type you want to stay away from and that is Instant Oats! Those are heavily processed, they are pre-cooked and dehydrated. Leaving very little nutrition in them. There may be preservatives or extra salt or sugar added. Those usually go by the Quaker brand – I’m not a fan of how they take a perfectly nutritious grain and mess with it! ;)

I am SO excited to make these! I rarely indulge in cookies since being diagnosed with celiac 12 years ago…because I find the GF packaged ones too dense or too oily. These are a perfect way to fix that!

You have a great question here although it is a very confusing issue but I’ll still try to help you.
Both bananas and oatmeal are great for digestion.
Oats have lots of fibre so they are excellent for treating constipation. And bananas are a bit confusing as they could contribute to both, relieving and leading to constipation.
It all depends how you eat them, how frequently etc. When they are baked in this cookie, they remain quite neutral so it shouldn’t matter as much.
Keep in mind that a great digestion is also contributed to the amount of liquids you drink. If you’re not properly hydrated and not eating foods rich in natural fibre, like fresh vegetables and fruit than your digestion might be poor.
Also limiting wheat, processed and sugar products will help you balance things out ;)

TriesTried it this morning and loved the cookies. Amazing bites for breakfast or between meals snack time. I used dried cranberries and they tasted like my morning oatmeal but in delicious bites. Hm… how could we make banana + oatmeal cookies not taste like bananas ;)
The taste of the bananas is (unfortunately for you) there, but here’s my suggestion. Try subbing 1/2 of the bananas out with about 3-4 tablespoons of apple sauce and see how you like that.
Add in 1 tablespoon at a time, mix it up and check for consistency. It should not be too runny, as then the dough would start to fall apart.
To cover up the taste a bit more, try adding some spices like cinnamon ;) These would be very yummy I think! (No longer two ingredients but still simple and delicious ;))

To sub for ripe banana; roast sweet potato until ooziing–that’s all natural sugar carmelizing!! Cool, peel, puree. Choose darker skins, like red garnet, for sweeter flavor.

I have made other breakfast cookies with bananas as the main ingredient-not a huge fan… I had some ripe bananas and these were to easy not to try. I added shredded coconut, a few chocolate chips, cinnamon and a flax egg. The cinnamon balanced the banana flavor so it wasn’t overpowering. I love these!! Trying not to go back for more :) Next time (because there will be a next time) they will get some dried cranberries. Thanks so much for your inspiration!

Wow, these are so simple – I can’t believe they are made using only those two ingredients…. Unfortunately, in Australia they won’t certify oats as gluten-free… I can eat them just fine, but others are missing out. I presume you could just use quinoa or buckwheat flakes. Or this wonderful Brookfarm Porrij that’s gluten-free.

What??? You mean they lasted long enough to store? lol
Just kidding ;) Because there’s so much banana, they’re best fresh, but you could store them in the refrigerator for max 3 days.
I haven’t checked on freezing, but for a month should be fine, then just defrost in the fridge overnight – if you do that make sure you freeze them on the same day you bake them and then eat them the same or next day after they defrost.
And keep them wrapped up in some parchment paper and then placed inside an airtight container.

Hi Ella! Thank you so much for this amazing recipe! We’ve now made four batches of them and we’re having so much fun experimenting with different add ins. In our latest batch we added carob chips, sunflower seed butter and cinnamon – and yum! We’ve also tried replacing the banana with apricot applesauce and those came out great too (we added chopped dates for sweetness). I’m looking forward to making these for the baby in a few months when he’s old enough for finger foods :)

Ohmygosh. Another great recipe I am dying to try…. What is the carb content of these? I would be happy with the carbs for the whole batch, and then I can divide that between how many cookies I make from the batch :) Stupid diabetes.

So this is an easier one…
1 cup of oats is 46g of carbohydrates, 8g of fiber
1 banana is 27g of carbs, 3g of fiber – the recipe calls for 2.
Total 110 – this makes about 24 cookies.
Sidenote, I would throw in some nuts or seeds to increase the volume and protein – so it becomes more filling to eat fewer ;)

Thanks for your great question. No actually you definitely shouldn’t as that would add too much moisture and the cookies wouldn’t turn out.
For a softer cookie, you could let the oats stand with the mixed banana for about 15 minutes and then bake, but you don’t have to. Try them out this way first and see how you like them. You could also add extra seeds, nuts and spices ;) Let me know how you like them! xoxo

I personally haven’t tried freezing them. So I can’t help you much. You could certainly try a batch and check them the next day to be sure.
If serving for a party, I would add a few more ingredients like seeds, such as sunflower seeds (especially to keep them allergy friendly), chocolate chips and a bit of cinnamon or vanilla extract. They are a bit plain and I’m not sure if that would disappoint people. Some people have very high expectations from oats and bananas :)
