Yum! I love a delicious simple sandwich. It’s quick to make up, fresh tasting and so good!
This is what I like to load up on mine:
- wholemeal dark rye bread, wheat-free (you can substitute with a gluten-free bread of choice)
- hummus, I usually whip up my own in a few minutes, like this one I made from lentils
- a slice of tomato fresh picked from the garden
- slices of avocado
- topped with a sprinkle of sesame seeds
Sometimes when I’m out of hummus or other spread, I mush up the avocado and spread that as my base so all the toppings stick to it and don’t fall ;) This is one good sandwich, I just had one for breakfast and I might have another for lunch with a salad side dish ;)
