We don’t eat a lot of processed foods or cereals but I thought it’s time for my daughter to have the infamous RICE KRISPIES SQUARES. Except I like to make healthier recipes all the time especially for my daughter. So I searched around in my fridge and cabinet and added these great ingredients to the recipe on the box.
Almond Rice Krispies Cakes
follow the recipe on the box, which is:
3/4 cups of margarine or butter (I prefer butter),
250 g pkg. marshmellows (I use half of this to cut the sugar)
vanilla extract (make sure you use pure)
6 cups of Rice Krispies cereal
Here is how to make them healthier:
1/4 cup honey
1/4 cup almond butter
2 spoons of wheat germ
Directions: follow the directions on the box: melt the butter on low heat, stir in the 1/2 bag of marshmellows, remove from heat, stir in vanilla + honey + almond butter, add in the cereal slowly, in between the mixing sprinkle in the wheat germ. We spooned them – or mostly shoved the batches by hand into a muffin pan. My daughter had a blast doing this – give it a try and go find ways to make them even healthier and let me know what you come up with. Enjoy.
